Harvesting occurs in February or March, 8-9 months after planting. Tubers are dug by hand, washed and disinfected to prevent mould. Many growers peel the skin off with a special knife, but some herbalists believe that there is no advantage to removing the skin.
The tubers are then dried down to about 25% of their wet weight. The dried “fingers” are then graded and packed.
