Ingredients
- 1/4 cup of olive oil
- 2 big onions, finely chopped
- 2 celery stalks, finely chopped
- 4 garlic cloves, thinly chopped
- Kosher salt, freshly ground pepper
- 2 large cups of raw cashews
- 2 tablespoons of raw or light brown sugar
- 1 teaspoon finely crushed red pepper flakes
- 2 pounds frozen sugar snap or green peas, thawed
- 1 tablespoon of vinegar
- Thinly sliced spring onion and crushed potato chips (for serving).
Preparation Process
- Heat oil in a big saucepan over medium-low. Include few onions, celery, and garlic and cook, stirring often and adding a splash or so of water if the bottom of the pan gets too brown, until golden brown for 30–40 minutes.
